THEORETICAL SIMULATION AND EXPERIMENTAL STUDY ON VACUUM COOLING

  • The finite dfference method was used to simulate the unsteady state cooling of spher, infinite slabs and infinite long cylinders of food materials subject to evaporation at the product surface. The process of heat and mass transfer in the cooling were also analyzed, and tested by experiments.
